Wanna talk fresh and yummers?? Try this caprese salad with your meat dish!
- Vine ripen tomato (if available) Can’t wait for a good beef steak tomato this summer!
- Part Skim Mozzarella (I usually like to get a fresh mozzarella, but Sorrento has to do for tonight!)
- Fresh Basil (again…can’t wait to grow my own soon!)
- Balsamic Vinegar
- Extra Virgin Olive Oil
- Cracked Pepper (if you like)
Once you slice the tomatoes and mozzarella…layer them as seen in picture. Spray with olive oil (or you can skip this step) and drizzle with balsamic vinegar. Cut your basil (or tear…I like to ribbon cut- see picture) and spread on each tomato. If you like…crack some black pepper over each.
You will LOVE this fresh, creamy and tangy side! I promise.
If you want to try something with a little twist to this…use low fat feta instead of mozzarella 🙂 You can even use cherry tomatoes instead of a vine ripen. You can even leave the mozzarella off if you are really watching it! It’s STILL good!
