CLEAN EATING! Well…the time has come for me to super clean my meal plans as I am 12 weeks out from my next competition. The trainer has been checking in and is on me like white on rice! 😉 Tonight I have baked my chicken breast in tin foil and sauteed my mushrooms and red onion. Total cook time 40 minutes.
- 3 Chicken Breasts
- Package of Crimini (baby portobella mushrooms)
- 1/2 red onion
- garlic powder (I wanted to use a minced garlic paste, but my child wanted to come home and play instead of go grocery shopping…so powder it is)
- black pepper
- extra virgin olive oil
- 3 sheets of tin foil and a cookie sheet
Preheat oven to 375F.
Trim fat and skin off chicken breasts. Place 1 breast in center of a sheet of tin foil. Sprinkle with garlic powder and black pepper. **If I had made it to the grocery store…I would have made a garlic paste and spread on the chicken breast!** Fold up tin foil as shown…making a sealed pouch.
Place all 3 on a cookie sheet and place in center rack in oven. Set timer for 40 minutes.
While that’s cooking, slice your onion and wash your crimini. Lightly drizzle extra virgin olive oil in a large skillet and add onion and mushrooms. Add black pepper if you wish. Saute on medium heat…cover about mid way through so the steam helps to soften the mushrooms/onions. Check back and stir so you don’t burn them. I like to uncover when they’re pretty done and let them fry up on the bottom a bit to crisp the mushrooms. Transfer to bowl.
Well…looky there…I have time to wash my dirty dishes while i’m waiting on the chicken to finish. I do not have a dishwasher…my hands are my dishwasher. Oh lucky me. lol. **I NEVER want to hear anyone say they don’t have time to cook!!**
Ding Ding…chicken is done. Unwrap your tin foil being careful since the foil is hot and so is the steam!! Chicken will also be sitting in it’s juices. Hopefully all has been contained in the foil, but some may have seeped onto your cookie sheet. Just be careful. It’s hot. Remove your chicken, slice with a good sharp knife and transfer onto your plate.
Top with 1/3 of the mushrooms and onions and plate with your side. I had mine with asparagus.
