Shrimp & Cream of Rice (sub for Grits!)

If you like grits…I bet you would like cream of rice (milled from whole grain brown rice).  Super easy and it took less than 10 minutes to make!

Ingredients:

  • 5-7 shrimp (deveined, cooked, peeled and thawed)  You can buy a bag at SAMs.  Thaw shrimp overnight or over running water for 5 minutes.
  • 1/4 cup Red Mill Cream of Rice
  • 2/3 cup water
  • low fat sharp cheddar cheese (or any low fat cheese)
  • green onion
  • low fat turkey bacon (0ptional and was not used here…but will be next time!)
  • cracked black pepper (optional)

Directions:

Microwave shrimp for approx 30 seconds to heat up.  You don’t want to heat for too long or else already cooked shrimp just becomes too tough to eat.

**If I had time…I would buy fresh and steam them myself…but time is of the essence as usual!**

**Another quick side note:  try blackened shrimp! **

Add water in a bowl and microwave for 60 seconds.

While that’s cooking, chop up most of your shrimp (leaving 2 whole for presentation) 😉

Remove bowl from microwave and add cream of rice.  Put back in microwave for another 90 seconds…remembering to watch carefully so it doesn’t over flow…as you see mine did! 😦  Luckily not too much was lost!  If cream of rice is still too runny, put it back in the microwave for 30 seconds at a time until it’s a smooth consistency.  Just please please keep an eye on it!  Let it bubble up…not bubble over.

While you were keeping an eye on your bowl…you should be finely chopping your green onion.

Remove bowl from microwave, stir.  Add chopped shrimp to cream of rice and stir.  If you use blackened shrimp, don’t mix it into the cream of rice, just add on top (this is more a presentation thing) 😉

Shred cheese over bowl.  I used these little individually packaged cheese because it takes me forever to eat cheese…so I didn’t want to waste buying a block or a bag of shredded cheese.  This was 1 oz of cheese and notice…I used less than half of it.

Place 2 whole shrimp in the center for presentation and sprinkle the green onion on top.  Add cracked pepper if you wish.  Omit salt…the shrimp has enough sodium in it!  You may add some crisp low fat turkey bacon sprinkled on top if you wish (it would be sooooo good).
