Eggs for dinner!

Eggs were not my 1st choice tonight…but I came home to frozen fish still in the fridge! 😦  No worries…I have eggs for protein.  It was my low carb day anyways.  I normally eat my eggs plain in the mornings…so I refuse to eat them plain for dinner.  Here I go through my produce drawer again!

Ingredients:

  • 4 whites, 1 whole egg
  • small handful of sundried tomatoes
  • 1 glove of garlic
  • green onion
  • cracked black pepper
  • EVOO
  • low fat feta (optional, not used here)

Directions:

Mince garlic.  Dice sundried tomatoes and green onion.

Lightly drizzle your skillet.  Add sundried tomatoes, garlic and green onion and cook on medium heat, stirring frequently.   Cook to your liking.  I like to cook it until my garlic is a little brown but NOT burnt!  You do not want to burn your garlic.

Add your 1 egg and 4 whites and crack some pepper on top.  Scramble until done.

You can crumble  some low fat feta on top and serve with some Ezekial or whole wheat toast if you wish to add some carbs.
