Another dish from my Vegetarian Plate leftovers (see post from the other day for recipe)! I used the Spinach, Tomato and Mushrooms as a topper for my scrambled eggs. Delish!

Want your kids to eat more fruit? If they won’t eat it by the bowlful…make it fun…add to waffles, pancakes (on top or IN the waffles, pancakes)…add to yogurt, cereal, oatmeal, etc. Ingredients: strawberries and blueberries or berries of choice, banana waffles (whole wheat or organic eggos work) or make your own batch of waffles … More Better than fruit loops 😉
