Chipotle Chicken Bowl

So if you’ve ever eaten the Chicken Bowl at Chipotle…you will understand my love for this dish.  I literally made it in 20 minutes!

Ingredients makes 4 servings or 2 hungry man/woman servings 😉


  • 1.5 lbs Thin Sliced Chicken Breast
  • 2 round slices of Red Onion
  • 1 cup of small Cherry Tomatoes
  • 1 can Corn
  • Cilantro
  • Minute Ready to Serve Brown Rice
  • Cracked Black Pepper
  • Fiesta Lime Mrs Dash
  • EVOO
  • 1/4 cup Non Fat Plain Greek Yogurt
  • 1 tablespoon lime juice


Add a drizzle of EVOO to large skillet.  Slice up chicken breast into cubes/strips (I used kitchen scissors).  Add to skillet and add Mrs. Dash (more or less depending on your taste).  Cover and cook at medium/high heat until done (stir occasionally).

Dice red onion.

Slice cherry tomatoes in half.  I used a really small cherry tomato, so if you use a larger cherry tomato, you may need more than a cup full.

Tear off as much cilantro as you wish to use.  I love the fresh flavor of it, so I used alot.  I removed most of the long stems and then cut up with a knife.

Open can of corn and drain.

In a bowl, add corn, onion, tomatoes, cilantro…crack some pepper on top and mix thoroughly.  If you wish…you can also add black beans, but since I had rice already, I didn’t want to add any more carbs.

Microwave brown rice per directions (1 minutes per container).

Ready to plate!  Rice, chicken, corn mix (remember…this makes 4 healthy portion servings or 2 large servings) .

In a sandwich bag, add 1/4 cup of yogurt, maybe a tablespoon of lime juice (yes you can use the little green lime juice containers) and squish bag to mix thoroughly.  Cut the tip and squeeze onto your masterpiece (only use 1/4 of it for each dish) 🙂  I tend to find I use alot less this way than if I used a dollop with a spoon.  (this really comes in handy with actual sour cream)
