Spicy and Smooooth!
Make use of that salmon you cooked in bulk the day before!
Ingredients make 2 servings.
- 6-8 oz Salmon (previously cooked and seasoned with Mrs Dash Fiesta Lime and refridgerated)
- 1/2 avocado
- 1 medium tomato
- 1/4 cup no fat plain greek yogurt
- 2 tablespoon lime juice
- 1/2 mango (if you don’t have or like mango, try peaches!)
- lettuce of choice
- whole wheat tortilla
- low fat feta (optional)
Dice mangos, thinly slice tomato, slice lettuce, peel avocado.
In baggie, add avocado, yogurt and lime juice. Mash with your fist as shown until smooth and color is consistent. Squeeze into corner of bag and cut corner of bag so you can pipe onto wrap when layering.
Lay out your tortilla on a plate. (Leave space on one side)…layer lettuce, tomatoes, 4 oz of salmon, pipe on avocado spread, add mangos. Feta is optional (not used here). Fold bottom and wrap. Secure with toothpick.
**If you don’t want to pipe avocado…obviously you can just spread it on the tortilla 🙂
