Soooo…I came home and had some cooked salmon in the fridge. I wanted salmon tacos, but I wanted to skip the major carbs so I could have air popped pop corn later that evening. So I find some romaine lettuce and decide to do my own version of a lettuce wrap.
It’s a salmon taco…but substitute the corn tortilla for romaine lettuce. Delicious, healthy and still easy to pick up and eat.
