Chicken and Broccoli Alfredo Linguine (whole wheat of course)

Here is a fairly healthy version for anything alfredo (and it’s available at the grocery store)!  My daughter loves it, so I had to find a way to incorporate it into our dinners.  My choice would have been to find a way to create it myself…but time is of the essence tonight!

I apologize for not having a series of “how to” pictures as I normally would…my camera didn’t retain the images I took.

Serving for 2 adults


  • 1 lb Chicken Breast
  • 1 jar of Classico Light Asiago Romano Alfredo Sauce (sorry it’s not homemade!)  you will actually only use 2/3 cup.
  • 1 12oz bag of BirdsEye SteamFresh broccoli
  • 1 box of whole wheat linguine (you will only use approx 1/3 of the box)
  • salt, pepper to taste
  • EVOO
  • grated parmesan cheese (optional)


Add EVOO to a large skillet.  Cut chicken breasts into strips or dice.  Lightly salt and pepper to taste.  Cook thoroughly.  Set aside.

While chicken is cooking, boil water for pasta.  Add 1/3 of a box of whole wheat linguine.  Cook per instructions.

Also…while all that is going on, steam broccoli in the microwave.  I always steam for the minimum time so they don’t get too mushy…but I think it depends on your microwave wattage as well.  Drain and set aside.

Once pasta is done, drain and add to skillet (where the chicken is).  Add broccoli.  Add 2/3 cup of alfredo sauce.  Mix thoroughly.  Done!

**add a light sprinkle of grated parmesan if you choose**
