A quick way to get in your carbs and protein!
- 4 egg whites plus 1 whole egg
- 4 oz potato hash (or you can use diced or sliced potatoes)
- Sprinkle of cheese
- PAM and EVOO (extra virgin olive oil)
- Salt and pepper (optional)
In a medium skillet, add a drizzle EVOO and then 4 oz of hash. Cover and cook on medium heat. Add a bit of water periodically so that steam is created, cover and cook more until potatoes are cooked thoroughly. I like to then crisp up the bottom, so I remove the cover and crank the heat up a bit.
In another skillet, spray with PAM. Add eggs (lightly salt and pepper to taste) and scramble or cook them to your liking. Sunny side up, over easy…however you please.
Time to layer. Plate, hash, eggs and a sprinkle of cheese if you wish.
