Clean the Mug Cake! ;) 3 minutes!

Well….finally…for those asking for a sweet treat…

Kayla decided to put on her best dress and have a birthday party for her stuffed animals.  But wait!  We have no cake in the house…BUT…I did have ingredients.  This is a flour less clean mug cake…but it does have carbs from the honey and sweetened coconut flakes (which are optional). You can also cut the carbs by using sugar substitute in a reduced amount…like maybe 1 tablespoon?! but don’t hold me to that amount.  lol…I haven’t experimented with it yet.

The entire cup as listed here has about 40 grams of carbs…so just eat 1/2 🙂

Makes 1 Mug Cake

Ingredients:

  • 3 tbs of almond meal
  • 3 tbs of cocoa powder
  • 2 tbs of honey
  • 1 tsp of vanilla extract
  • 1 egg
  • a few dashes of salt
  • 2 tablespoon coconut flakes (optional)
  • 1 tablespoon coconut oil (Recommended.  I didn’t use it in my 1st time making this…but next time, I will add to give it additional moisture.  Either coconut oil or unsweetened applesauce is fine too.)

Directions:

Put all dry ingredient in your mug.  Mix with a fork.

Add wet ingredients.  Mix thoroughly.

Microwave 2 minutes.

DONE!

There are many different variations of this Mug Cake…so have some fun and experiment!
