Fried Chicken Nuggets…healthy & low carb

Missing the crunch of fried chicken?  Here’s a healthy version for you!  You can make this in various forms…chicken nuggets, butterfly chicken, whole chicken breast.


  • 3 Chicken Breast
  • 1 cup Almond Flour (only 6g carbs per 1/4 cup)
  • 2 egg whites
  • salt, pepper, italian seasioning (optional)
  • extra virgin olive oil


Set up 2 stations.  One for the egg whites and one for the almond flour.  Add your salt, pepper and any other seasoning into the almond flour and mix thoroughly (In my pictures, I made 2 batches.  Plain for my daughter and italian for me.)

Slice chicken into strips, nuggets, butterfly or keep whole.  Your choice.

In a large skillet, add a drizzle of EVOO and set on medium heat.

Dredge chicken through egg white, then through flour.  You can individually coat or add all the nuggets and toss until evenly coated.

Place in skillet and cover.  Cook on each side until brown and crispy to your liking and cooked thoroughly.

Plate and enjoy the crunch and flavor!!

Remember…EVOO and Almonds are healthy fats 🙂 so no worries!  Plus…we only used a drizzle of EVOO…we didn’t submerse it into oil.
