Protein Pancake

I was determined to perfect my protein pancake recipe…and today…I could’ve eaten them WITHOUT syrup they were so tasty!!  BUT I got creative…I made my own side syrup as well.

This pancake has a coconut flair because I use EV Coconut Oil (which amazingly adds to the flavor!).  If you don’t like coconut, you can use another oil.

Serving Size 1= 4 cakes:  35g Protein, 34g Carbs, 21g Fat (don’t freak out…see link below for health benefits of EV coconut oil), 478 calories

2 cakes:  17g Protein, 17g Carbs, 10g Fat, 236 calories.

Pancake Ingredients:

  • 1 heaping scoop Optimum Nutrition 100% Gold Standard Whey (Vanilla Ice Cream flavor)
  • 1/4 cup Brown Rice Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 packages of Stevia
  • 1/2 Cup Unsweetened Vanilla Almond Milk
  • 1 tablespoon Organic Extra Virgin Coconut Oil
  • 1 medium/large Egg

Syrup Ingredients (or just use sugar free syrup):

  • 1/4 teaspoon Molasses
  • 1/2 teaspoon water

Directions:

Place all wet pancake ingredients in bowl (egg, milk, oil).  For the coconut oil, likely it will be solid when you scoop it out, so just place in microwave about 20 seconds to melt.  Mix ingredients thoroughly.

Now slowly mix in dry ingredients (stevia, baking powder, salt, flour and whey).

In skillet, spray PAM and place over medium heat.  Pour 1/4 of the mixture into pan and let cook until it starts to bubble up.  Once bubbles start bursting, it’s likely time to flip (pancake will be nice and browned).  Cook other side until browned.

Repeat for other 3 pancakes.  Don’t forget to spray PAM for each pancake.

For the syrup, simple mix the molasses and water.  This syrup is very “wet”…so my suggestion is NOT to pour over pancake, but to cut up your pancake and simply dip the “edge” in to the syrup.  Molasses is VERY potent…so a tiny bit goes a looooong way!  Again, if you want regular syrup…go for it!  I just wanted to try something natural 🙂 and to cut the calories!

These pancakes are honestly so good…and the coconut flavor really stands out, you could eat them alone!
