This was truly a throw together today!
Serves either 1 to 2. Since i’m watching my carbs…it’s 2 servings for me 🙂 Since it’s 2 for me…1 serving = 294 Calories, approx 25g Protein, 20g Carbs, 11g Fat (only 2 saturated).
- 1 large Chicken Breast (slice or cut in small pieces)
- 1 Minute Ready to Serve Brown Rice (40g carbs) or 3/4 cup of brown rice
- 2 garlic cloves (diced or rough chop)
- 1-2 green onion (mine had 4 green shoots so 1 diced was enough) – or use a regular onion (maybe 2 tablespoon chopped)
- Salt, Pepper
- Low Sodium Soy Sauce
In a medium to large skillet, add a drizzle of EVOO, chicken, salt and pepper and brown your sliced chicken breast on medium to high heat. Get a nice brown sear on it, tossing frequently to cook all sides. When it’s almost fully cooked, add in diced green onion and diced garlic. OH MY…the yummy smell coming from the skillet now is amazing! You could stop here and eat this by itself!
BUT…microwave the Minute rice for 60 seconds and add to your skillet.
To make it official fried rice (lol)…add in 2 egg whites (this will also up your protein count by 6 grams). Scramble together and it’s done!
Plate and give it a light drizzle of soy sauce. (you can add soy sauce during the cooking process…but I find if I add it at the end…I still get the amazing flavor and I use A LOT less!!!)
**NOTE** Feel free to add a lot of veggies to this dish to make it even more filling! 🙂
