Today’s lunch… Chicken Salad hold the mayo!
- chicken breast (shredded or chopped in processor)
- 2 scoops of non-fat plain greek yogurt
- splash of lemon juice
- 1/4 cup of dried cranberries
- 1 small stalk of celery (diced)
- salt, pepper
- 2 slices whole wheat toast
Blend all ingredients together (minus the toast) 😉 and you can either eat it alone or on toast as a sandwich!
Easy and delish!
Note: This is also a GREAT way to get rid of that dry chicken in your fridge! Turn into chicken salad!
