Greek Yogurt Chicken Salad

Today’s lunch… Chicken Salad hold the mayo!

Ingredients:

  • chicken breast (shredded or chopped in processor)
  • 2 scoops of non-fat plain greek yogurt
  • splash of lemon juice
  • 1/4 cup of dried cranberries 
  • 1 small stalk of celery (diced)
  • salt, pepper
  • 2 slices whole wheat toast

Blend all ingredients together (minus the toast) 😉 and you can either eat it alone or on toast as a sandwich!

Easy and delish!

Note:  This is also a GREAT way to get rid of that dry chicken in your fridge!  Turn into chicken salad!
