Got Thanksgiving Leftovers? Simple Solution!
Turkey & Rice Soup
Ingredients: For 4-6 servings (depending on adult or child servings) I used:
2 large boxes of stock
2 tbsn EVOO
15 baby carrots
3 celery stalks
1/4 small onion
2 garlic gloves
2 Uncle Bens Rice (sub noodles if you prefer)
Maybe 1 lb of turkey
Rosemary and Thyme
Sauté celery, carrots, onions and garlic in a little EVOO.
Add some Chicken Stock and bring to a boil while veggies soften.
Add herbs. I used thyme and rosemary (remove rosemary after stock cooks for a while).
Shred leftover turkey and throw into stock.
Add the rest of the stock.
Throw in some Uncle Bens or Minute Rice. Let cook for 10 minutes for rice to soften.
If you like a thicker soup, add tapioca flour (I used 3 tbsn and mixed in water before adding).
Add salt and pepper to your liking!
